What Can You Do With a Drunken MIDI?

Several years ago I saw a computer science program on Public TV that showed a piece of software that could take an existing MIDI file and alter it so it sounded like it was played with non-digital musical instruments. Well, I have the MIDI files I want to play with...and I can't remember the name of the software, or the name of the TV program where I heard about it. *sigh*
